2.5kg McCain Our Chef Solutions Simply Mash – frozen

300g Frozen Peas

300g Chopped Onions

250g Green Pepper, finely diced

75g Tikka Curry Paste

20g Chopped Garlic

15g Chopped Ginger

Fresh Parsley

Fresh Coriander

75g Wholegrain breadcrumbs

70g Wholegrain Flour

Cook McCain Simply Mash as per on pack instructions.
Whilst the potatoes are cooking chop the onions and peppers finely.
Place them in a bowl with the fresh chopped herbs, garlic, ginger, Tikka paste and peas.
When the potato is cooked, mash until smooth.
Combine the hot mash with the other ingredients and mix well.
Check the consistency and add the breadcrumbs and flour to firm the mixture up.
Form into patties to the size you require.
Lightly fry in a little oil in a large non-stick frying pan until golden on each side.
